Su piel fina y su alto contenido en agua los hacen muy sensibles a los golpes y a la manipulaci\u00f3n. Por eso, en explotaciones como las de <strong data-start=\"490\" data-end=\"502\">Endinava<\/strong>, la recolecci\u00f3n se realiza de forma <strong data-start=\"539\" data-end=\"549\">manual<\/strong>, seleccionando uno a uno los frutos en su punto exacto de maduraci\u00f3n.<\/p>\r\n<p data-start=\"621\" data-end=\"760\">Los higos no maduran fuera del \u00e1rbol, as\u00ed que deben recogerse cuando ya est\u00e1n dulces y tiernos. Las dos principales campa\u00f1as en Espa\u00f1a son:<\/p>\r\n<ul data-start=\"762\" data-end=\"883\">\r\n<li data-start=\"762\" data-end=\"812\">\r\n<p data-start=\"764\" data-end=\"812\"><strong data-start=\"764\" data-end=\"774\">Brevas<\/strong> (junio-julio): de la primera cosecha.<\/p>\r\n<\/li>\r\n<li data-start=\"813\" data-end=\"883\">\r\n<p data-start=\"815\" data-end=\"883\"><strong data-start=\"815\" data-end=\"824\">Figs<\/strong> (agosto-octubre): de la segunda floraci\u00f3n del mismo \u00e1rbol.<\/p>\r\n<\/li>\r\n<\/ul>\r\n<hr data-start=\"885\" data-end=\"888\" \/>\r\n<h6 data-start=\"890\" data-end=\"938\">\ud83e\uddca Conservaci\u00f3n limitada y m\u00e9todos naturales<\/h6>\r\n<p data-start=\"940\" data-end=\"1176\">Al ser tan perecederos, los higos frescos tienen una vida \u00fatil muy corta: de <strong data-start=\"1017\" data-end=\"1031\">2 a 4 d\u00edas<\/strong> a temperatura ambiente, y hasta <strong data-start=\"1064\" data-end=\"1095\">una semana en refrigeraci\u00f3n<\/strong>. Por ello, muchas veces se procesan o comercializan r\u00e1pidamente tras la cosecha.<\/p>\r\n<p data-start=\"1178\" data-end=\"1209\">Formas comunes de conservaci\u00f3n:<\/p>\r\n<ul data-start=\"1211\" data-end=\"1458\">\r\n<li data-start=\"1211\" data-end=\"1306\">\r\n<p data-start=\"1213\" data-end=\"1306\"><strong data-start=\"1213\" data-end=\"1231\">Secado natural<\/strong>: para producir higos secos, mucho m\u00e1s estables y con sabores concentrados.<\/p>\r\n<\/li>\r\n<li data-start=\"1307\" data-end=\"1370\">\r\n<p data-start=\"1309\" data-end=\"1370\"><strong data-start=\"1309\" data-end=\"1345\">Envasado en atm\u00f3sfera modificada<\/strong>: ideal para exportaci\u00f3n.<\/p>\r\n<\/li>\r\n<li data-start=\"1371\" data-end=\"1458\">\r\n<p data-start=\"1373\" data-end=\"1458\"><strong data-start=\"1373\" data-end=\"1411\">Conservas, mermeladas o confituras<\/strong>: una excelente manera de aprovechar su dulzor.<\/p>\r\n<\/li>\r\n<\/ul>\r\n<hr data-start=\"1460\" data-end=\"1463\" \/>\r\n<h6 data-start=\"1465\" data-end=\"1500\">\ud83c\udf7d\ufe0f Usos gastron\u00f3micos del higo<\/h6>\r\n<p data-start=\"1502\" data-end=\"1665\">El higo es un ingrediente muy vers\u00e1til en cocina. Su sabor entre dulce y floral lo hace ideal para recetas tanto <strong data-start=\"1615\" data-end=\"1625\">dulces<\/strong> como <strong data-start=\"1631\" data-end=\"1642\">saladas<\/strong>.
